I was first introduced to Purple Carrot over a year ago by a friend. They knew I was interested in meal kits, but discouraged by the lack of variety in the vegetarian or vegan options offered by the more mainstream services available at the time. I read the article he sent over and signed up the next day! I just wanted to avoid grocery shopping and buying more than what I needed or could use before it went bad.
What I got was an insane variety of delicious plant based meals. When I stopped eating meat, I had to get more creative with vegetables and started experimenting with veggies I had never tried before. With Purple Carrot, I continued my culinary adventure with even more grains, techniques, and cuisines.
This was the first meal I made. Shakshuka with Tofu Dumplings over Kasha. It was different, it was hearty, and I had enough leftover for 2 more meals.
Garlicky Greens Curry must have been so popular it was one of the only meals I got twice. Over the course of the 6 months I was getting meals, I never saw repeats. Who ever is coming up with these meals has an incredible amount of creativity to always keep the ideas fresh. However, glad that they sent this one twice because it was one of my favorites! The flavor was so true to the traditional flavors of my family's Indian dishes.
Every now and then you just want a classic. Miso-Chili Meatballs over Spaghetti and Carrot Noodles was just as satisfying as it's meaty counterpart.
Despite some classic items, I'd say you would need to be an adventurous eater to truly appreciate what Purple Carrot has to offer.
I paused my subscription several months ago because I was traveling and then got so busy with work and life after I got back, I didn't think I had the time to devote to the meals each week. One thing I did learn, is that, as a single person, the three 2-person meals is a bit much to do every single week. The servings are generous and I often ended up with 2 additional servings, which meant I was eating Purple Carrot meals for lunch and dinner almost 7 days a week.
I just restarted my subscription again and was glad to see that I could schedule/skip deliveries up to 4 weeks in advance. For my purposes, doing the meal delivery of three 2-person meals every other week works the best. The food often lasts the two weeks, so I'm not pressured to cook all three in a week.
For anyone interested in this, I strongly recommend it for singles, couples, and families. Plant based meals can be so filling and interesting and Purple Carrot really is making it easy to make a more compassionate choice.
